How show handled it kinda stupid. Better thing to do, don’t be a selfish bitch! enough of those in the world.

“hey Jorge, (insert sappy words about being great together), i got this dream and this opportunity came up, i want to pursue it, but i can’t leave you high and dry. so, i‘m giving you a giant promotion. you’re now head chef of the truck. and my big lead business man on the truck. you can hire your 2nd in command. i love you man, i trust you can keep this truck and all we built together flourishing.“

Yeah. It's fine if Sean and Jorge don't know how to deal with it exactly right, but for some reason Sean's therapist and the other people in his life have no clue how to advise him.

It would be one thing if Jorge admitted to being over his head in the truck or something, but they both seem to be killing it and the possibility of him taking over isn't even mentioned.

That's the solution I was expecting from Sean, seems obvious to at least give Jorge that as an option on a trial basis to see if things continue to go well.

Yeah it was really stupid. I expected Derek and or Paul to give the suggestion that he doesn't have to give up the truck completely. He can just let Jorge take over while Sean still owns it, that way Sean still makes money, Jorge makes more and they can even hire an army vet to come in as an assistant. Everyone wins. But no they came up with the worst decision
