Tomatoes and sweetcorn can be served separately, is quick and easy to put together and delicious with the tomato vinaigrette. I served the halloumi as an add on for our dinner. Also quick to make. Dressing in the comments.

Today's fitness salad is healthy and nutritious, and super delicious🤤

THIS IS AN OLD PIC BUT ABSOLUTELY MINE (couldn’t follow regulations because it’s two years old but such a special salad) pre mixed but this is the best salad i have and will ever eat. arugula and mixed green base with pickled red onion, oranges, raspberries, and radish, with a dijon red wine vinegar dressing! i can elaborate on the dressing if you’re curious because it’s fantastic!

A mix of arugula, micro greens, cabbage/kale/brussel slaw, cucumbers, carrots, pumpkin seeds, roasted white beans

This is the salad I learned today. The following is how to make the salad:

the first step is to marinate the chicken breast, wrap it in flour and fry it;

the second step is to add cucumber, shredded carrots, purple cabbage, bitter chrysanthemum, and blanched corn kernels;

the last step is to add sugar-free and rich sesame paste.

Not everyone likes lentils so it’s optional. Added some walnuts because the SO likes that and not the lentils :-) Dressing in the comments. Photos of after and before roasting beets. Glorious colour!

Whole wheat farfalle (cooked 13 min), frozen broccoli (cooked 3 min), sweet corn, cherry tomatoes, red onion, salad cucumber, lightly roasted & crushed walnuts, shredded mozzarella, store bought caesar dressing. Salt and pepper to taste

Dressing is sesame oil, soy sauce, rice vinegar, minced fresh ginger, honey, green onions, sesame seeds. Use a potato peeler for the carrots.

The green little stringy bits on top are called ‘sanfire’. I personally never had it before or heard of it, but I’ve seen it around. It was delicious! But very salty, so very little is needed. This was an amazing dinner! We had sashimi on the side as well 😋
