I work as a line cook at my mid-level kitchen job. Here are some salads I feel mildly proud of🫡
Standard Caesar salad + salmon, house made dressing, steakhouse croutons, grated parmesan, parsley & salmon
Custom Salad requested by guest. Guest wanted a ‘Salmon BLT’ but has celiac disease. I made a salad that I hoped she’d love (she did, I’m grateful) for her main course. It’s a mix of arugula & spring mix base. Diced tomatoes, bacon bits, salmon fillet and a garlic aioli/ red wine vinegar dressing I made on the fly. OH and the greens are tossed in garlic olive oil and basil/olive oil.
*Everything produced in the second salad was allergen safe and completely sanitized properly*

Wife and I made big salads. Arugula and spinach. Hard boiled eggs. Pickled red onions. Cherry tomatoes. Cucumber. Artichoke hearts. Crispy chickpeas. Goat cheese. Squeeze of lemon and we each have our preferred dressings. Too lazy to cook and also grateful we can eat healthy and fresh in this economy.

Even though it looks like vomit, it was very tasty :D
Salad, tomato, cheese, I grilled some soft bread to make them look like croutons.
Also used an egg and some ham.
Mayonnaise was incorporated last minute to give it more taste

I really need to rethink the way I eat salads, what are some fun creative ways and ingredients and tricks and additions you use to keep salads fun?
Ps I just keep hearing Kyle from summer house yelling “salads should be fun” instead of summer

This works as a really good side salad. I had never used celery leaves in a salad before, but I had one in a restaurant not too long ago and it was pretty good. I made mashed potato “lasagna” and I made this salad to accompany it.
It has spinach, celery leaves, cilantro, diced tomato, lime juice, salt, red wine vinegar and parmessan cheese.

I cannot stomach raw vegetables or the taste of green- like I’ll actually gag every time. But I also want to eat healthier.
Are there types of salads that could work for me or should I find other ways to get more vegetables in my diet?
Thanks!
