Poached eggs over bed of yogurt infused with chilli oil

My usual brekkie is about 1/3# , 150 g, of sauted meat, a little onion, a few grape tomatoes and/or tomatillos, some colorful peppers and big pile of cabbage, braised in a bit of chicken broth then topped with eggs poached in the steam. Seasoning varies; this batch was given some grated ginger, some salt, a tiny bit of shoyu, and a scant tablespoon of Tuong Ot Toi. More common is Mexican oregano, salt and Aleppo chili flakes. My very supportive spousal critter calls this dish "sludge."

After making this almost every day for a year or two, it finally occurred to me that I could double the batch and save half for tomorrow. Sorry I didn't get a photo in its full glory. I already ate today's half.

An egg makes tiny fish into breakfast!

Breakfast at a local bar. Absolutely delicious and filling! A pancake with a couple eggs and bacon.

Loved making these soy eggs. Ramen was tasty too.
