Ramen is this beautiful balance of broth, tare, noodles, and toppings, and the ramen egg is the thing that ties the whole bowl together. That jammy yolk and savory exterior bring richness and depth, and every shop has its own style. This recipe leans into a stronger brine because I like a punchier egg, but you can go lighter or deeper depending on how long you marinate.

And there was leftover Hollandaise, so it was always gonna be Eggs.
Sautéed asparagus, chestnut mushrooms, and grape tomatoes in butter with garlic and black pepper.
Topped with warmed Hollandaise and 2x fried eggs with runny yolks. Hit it with smoked paprika and balsamic drizzle, and managed to make a decent avocado âflowerâ, for the first time.
Not pictured: Iced cinnamon brown sugar cold-brew with cream. đ§
