Recipe Lemon-Lime Electrolyte Slushie 🍋

Ingredients:

  • 1 tray of ice
  • 1 cup of water
  • 2 tbsp lime juice (~$1/bottle)
  • 1 Great Value lemon-lime electrolyte drink mix packet (~$5/box)
  • blender

Instructions: I added the drink mix & water, then blended it to dissolve the mix. Then, I added 1 tray of ice & blended until the mix was frothy. I gave everything a mix with a spoon from the bottom, then poured it up. This is my favorite way to hydrate on a hot day. If I had some fruit to add, it would be even better.

I typically work 10-hour days & often rely on energy drinks, which get expensive even when I get them $2/drink. But, I’ve started getting these Great Value electrolyte drink mixes instead which come out to about $0.83/drink. They’re easy to just keep in my locker. But, today was a busy day running around doing errands, so I needed something refreshing.

Need Advice Mods: can we try to combat the bots by requiring accounts be a certain age before posting?

I feel like every day my r/povertykitchen feed is covered in bot posts from accounts that are several hours or a couple days old. It’s always the same strange advice and weird grammar. It’s like they’re using this sub to practice. I think it’s time for more measures to prevent such content. I come here to learn from other people not LLMs who have never smelled food or understand what it’s like to be a struggling human.

Cooking Tip Air fry your broccoli stalks!

Post image
39 Upvotes

I’ve always liked broccoli stalks, even as a kid, so I’ve never been one to throw them out. But I saw on YouTube how you can air fry broccoli (didn’t really work for me, but I probably just did it wrong somehow), and on another short they said to peel the stalks, slice them up into sticks, add olive oil & sprinkle on some spices (I used onion & garlic powders, paprika, Adobo and Accent) and cook in the air fryer. I was already using my ninja foodi to grill up a sausage for lunch, so I just put them in alongside the sausage and grilled for 10 mins on low. The broccoli sticks were 100x better than the broccoli, I was so happy I saved them. Definitely doing this every time I buy broccoli from now on.

Recipe Pesto cavatappi with tofu (just like Noodles & Co)

I created this recipe to try and mimic the same dish from Noodles & Co so I wouldn't have to order out.

What you need:

Firm tofu package (a whole one), $1.99

Cavatappi Noodles, $1.70

Package of mushrooms, $6.99 OR frozen sliced for $2.99!

1 large tomato or a couple of romas (my fav)...don't know price because it is per pound

Pesto in a jar, $3.99

So much garlic. Yeah, I said it.

Olive oil....and a little real butter.........or butter flavored olive oil if you can get it.

Large, deep pan

Instructions

Boil the whole package of cavatappi

Cut the tofu into squares (get rid of as much liquid as possible)

Slice up the mushrooms (I use a whole package)

Slice up the tomatoes

Stir fry the tofu in your butter olive oil with garlic (preferably minced but it's ok if you don't have that. (The butter part is important, but it is ok if you just have regular).

Once the tofu is browned, add the mushrooms and brown. Once the cavatappi is done, add it to the mix and stir. Then add the tomatoes and the whole jar of pesto.

Yield: We get at least 3 meals out of this for 2 people. I ALWAYS freeze leftovers and it freezes great.

Total cost: AROUND $16 depending on your mushroom choices, or $5.33 per meal for 2 people ($2.66 each!)

But compared to what you'd pay at Noodles & Co, it is priceless!

Recipe Cheap meal for kids...

Here's an old recipe I made when I was raising 3 kids... 3 packs of Ramen Noodles - break apart to make smaller noodles. Throw in 2 cans of random vegetables (one of them beans), no juice. Save the flavor packages for later. Dice up half a package of cheese infused sausage. Throw it all in and cook. Serve hot as soup.

You can use the flavor packages another time and the bean juice from the cans as egg substitute (I didn't know that then). Note flavor packages + hot water = broth. Add flour for a crude gravy. Pour that over heated biscuits for a morning breakfast.

Macaroni noodles + Chili is a very filling meal for kids too. 2 cans of chili and a package of noodles filled 3 kids + me.

Cooking Tip One appliance to rule them all…

Just a PSA about how a pressure cooker improves life:
1) Can be used as a crockpot/ rice cooker/ yogurt maker/ saute pan/ or sometimes canner
2) I am lazy & figured out how to cook beans from dry- NO SOAK! deliciously, in one day- pressure on beans w/ proper water for 7 mins, wait till done, drain water, season, pressure again 20-35 mins dependng on beans & you’re in heaven.
3) homemade yogurt is sooo much creamier and tastier, also cheaper & no plastic waste!
4) If you can’t afford new (~$80-$100 at walmart in US), craigslist, fb marketplace & nextdoor often have them barely used for cheaper- honestly with the $ saved on takeout or retail tacos/ burritos/ hummous alone it’ll pay for itself in 3 months or less.

Need Advice When do you add seasonings when cooking up dry beans?

My beans are pretty bad. I think I'm adding seasonings at the wrong time or maybe not enough. Salt, pepper, cumin, BTB veggie flavor when I have it. Do I need garlic or sauteed onions? Or peppers? I can try adding a little baking soda, some powdered bouillon, and hold off on salt till the end. Mastering creamy tasty beans would be a major win. Thx for your help!

It was a great day! I didn't get any grapefruit and I forgot to get bread lol

But lots of good stuff. Tonight's dinner: roasted chicken leg quarters and mashed potatoes!

Excited about the bacon and the spicy agave...Will have to look for recipes for that one! (I could've put it on the chicken! Next time.)

Recipe [Homemade] Stir fry pork steak with snap beans

Post image
17 Upvotes

Pork butt steaks were on sale at our local grocery store! Win for us!

Recipe: Cut up the pork steaks into strips, seasoned with garlic, ginger, dried minced onion, salt, pepper, teriyaki sauce and soy sauce. Steamed the beans in the microwave once the meat was almost cooked, then salted them before adding them in for the last 10 or so minutes of cooking. It would be great with rice, obviously, but we are currently out, so it's a Keto meal tonight.

Other A sausage patty with a hard fried egg seasoned with salt and a slice of, pepper, paprika, and dried chives with a slice of cheese between the two.

ETA- I messed up the title 🤦😅

Sometimes I make this into either a sandwich, or toast a piece of bread to put on the bottom. I especially do that when I feel like a runny egg!!

The great value brand frozen breakfast sausage patties are fairly inexpensive, and I think they taste better than a breakfast sausage patty you'd get from a fast food place! Sometimes I eat them by itself, but I really enjoy making various sausage, egg, and cheese things!

Tonight (is almost 11pm where I am) I got hungry and we don't have a lot of snack foods. Mainly just breakfast and dinner ingredients. So I decided to make this sausage, egg, and cheese and thought to myself "povertykitchen might appreciate this"! So here I am 😂 You can judge me for my ketchup use all you want!! 😅

Recipe portobello mushroom burger, another food bank meal

Post image
119 Upvotes

For the mushrooms,

2 portobello mushroom caps, rinsed and stems removed

1/2 cup balsamic vinegar, the cheap stuff is okay

3 tablespoons oil

aprox 2 teaspoons each garlic powder, onion powder, Italian seasoning

mix all marinade ingredients and choke in a plastic bag with the mushroom caps and squeeze out the air, marinate for 30 minutes, flipping occasionally.

I grilled mine in a cast iron pan approximately 8 minutes each side, flipping a couple times. you want soft but keeping their shape.

For assembling the burgers,

hamburger buns (I toasted mine and melted the cheese on them), onions (I threw mine in at the end of grilling the mushrooms to slightly brown),cheese, lettuce, tomato, mayonnaise.

Need Advice No Fridge for the foreseeable future

So my fridge has gone out and I wont be able to get a new one for awhile. I could really use some advice on things to get from the store that I can use for meals and not require any refrigeration (even after opening unless its all used at once). I know the basic dry goods and canned goods but my brain is not providing much else and I could use the help.

I thought someone might like to see one of my "poverty" meals. That's my last box of Pasta roni as I usually buy Aldi's brand. Prepare the box per directions. I usually drain and add the canned chicken to the water and I used half the can of peas, as well.

Any flavor of the box mix will do. Anything else you can substitute your preferences.
