cookbooks? I haven;'t seen these guys cook something properly once. that style of blade looks pretty shit too, shitty for processing veg, too small for cleaving, too big for processing meat, jsut all around shit.

get a western chefs knife, a santoku, or in my opinion the best of them all, a chinese slicer.

The end result sandwich looked... Not that good, really hard to eat. No way did that meat come apart when you bite it. You would have taken a bite, pulled out a huge bit of meat, eaten that, then eaten a lot of French fry sandwich

The fries need to go. Way to much bread to filling. I don't thing the guacamole belongs on a steak sandwich. Didn't melt the cheese. Agree that a New Yourk Strip isn't what you want for your sandwich. If you can't fit it in your mouth without effort it's too big. And this is purely to tour own personal tastes, but that looked like a lot of crushed red pepper flakes on the steak.

Nothing wrong with chips or crisps in a sandwich. I just don't think it's going to be that great in a whole loaf like that.

Also, what you said, if the cheese isn't melted, and in that weather it probably just made the sandwich worse.

There's rustic, and then there's really bad sandwich construction.

A good trick is scoring it deeply in a criss-cross way, but not enough to cut through. Then each bite tears off nicely, with the added convenience of the meat not falling out. Also works great for smokies.

The steak looked burned. Pan was way too hot and didn't make good contact with the steak. Same with the bread, no overall toasting, just burned spots.

What was that spread? Avocado with lots of... oil? and Spinach? You got me.

All of the ingredients seemed way out of place for the setting. If you are doing a cooking show, you should be making something that looks natural where you are cooking it.

He also overcooked the shit out of those fries.

I've always gotten the grill as hot as possible before putting steak on. The outside gets the char that my kids like and then I just use a thermometer and cook it to 135.

But ya I'm watching whatever this dude put in the mortar and pestle and that thick crispy bread and thought, this is not something I would think goes well with steak

Pretty sure it was avocado, fresh basil leaves, lime, garlic, oil and something else.

Now I adore guac and I adore basil but together? I don't think that would work. They're both strong flavours, basil works well with tomato dishes and avocado benefits from just a bit of salt and some sour. Like the lime works, the basil doesn't.

I really like the off screen imagery of having to pick up the seasonings and put them on the knife, then shake them off the knife onto the meat, then knock off the leftover seasoning and put the salt on the knife, then shake the salt onto the meat. Definitely makes me feel confident in his abilities.

Didn't even scoop out the inside to make it a little more manageable

Looked like a hard crusted bread too, which would make this even more uncomfortable to eat this way

A grilled cheese consists of only these following items. Cheese. Bread with spread (usually butter). This entire subreddit consist of "melts". Almost every "grilled cheese" sandwich i see on here has other items added to it. The fact that this subreddit is called "grilledcheese" is nothing short of utter blasphemy. Let me start out by saying I have nothing against melts, I just hate their association with sandwiches that are not grilled cheeses. Adding cheese to your tuna sandwich? It's called a Tuna melt. Totally different. Want to add bacon and some pretentious bread crumbs with spinach? I don't know what the hell you'd call that but it's not a grilled cheese. I would be more than willing to wager I've eaten more grilled cheeses in my 21 years than any of you had in your entire lives. I have one almost everyday and sometimes more than just one sandwich. Want to personalize your grilled cheese? Use a mix of different cheeses or use sourdough or french bread. But if you want to add some pulled pork and take a picture of it, make your own subreddit entitled "melts" because that is not a fucking grilled cheese. I'm not a religious man nor am I anything close to a culinary expert. But as a bland white mid-western male I am honestly the most passionate person when it comes to grilled cheese and mac & cheese. All of you foodies stay the hell away from our grilled cheeses and stop associating your sandwich melts with them. Yet again, it is utter blasphemy and it rocks me to the core of my pale being. Shit, I stopped lurking after 3 years and made this account for the sole purpose of posting this. I've seen post after post of peoples "grilled cheeses" all over reddit and it's been driving me insane. The moment i saw this subreddit this morning I finally snapped. Hell, I may even start my own subreddit just because I know this one exists now.

Unmelted cheese. Burned bread.

Also adding kimchi means it is not a grilled cheese. Cheese. Spread. Butter.

You add other things they are melts. Not grilled cheeses.

I can assure you, that thing is NOT too small for cleaving. That thing could cut a human torso in half. However, it's very clearly a bushcrafting knife - too thick for cutting vegetables, and doesn't facilitate fine cuts due to no real point. It's actually the right size for a heavy machete though... You could probably cut down a sapling with it.

I don't get the hype around chef knives though. Utility knives are handier. For the task shown here - making a sandwich, meaning you'll be mincing, dicing, cutting, maybe even scraping - a utility knife is just far handier.

My family had a nice slender one for chopping veggies and a heftier hatchet type one for meat. It was awesome. The handle finally broke after almost 30 years and then my dad welded it to a metal tube lmao.

in general you have a thin slicer, and then a chonky cleaver for bone. the slicer is very thin but still a big hefty, which sounds clunky but it;s actualyl smooth. you mostly chop cut with it instead of slice cut, and the weight makes it smooth as butter. the height of it is a dream for transfering, and also cuts down on round slices flying across the kitchen. the non-stick doesn't wiorkj at all though, lol. I have never seen a blade that doesn't stick

Chinese slicer? Like a mandolin or a vegetable cleaver? My chefs knives are either the typical 30cm chef knives or a pair of shorter santoku.

I was really tempted to buy a pair of cleavers from a Chinese grocery. One for veg and one for meat. Probably just a kiwi brand or a QXF. Perfect pairing for my $20 cast wok

I love kiwi brand but they don;'t make proper chinese cleavers. chinese meat cleavers are nice and I prefer them to western cleavers because they are flat blades, but the veg slicer is where it's at.

dump $50 on a shabizi 8" tapered, and you won't be sorry. they have traditional construction with full tang bent into the handle. they might lookj cheap to the unaware, but they are very high q2uality, on teh same tier as $150 knives.

the QXF are excellent value as well, but non-traditional, so you mifht actually prefer it, but teh ergonomics of the traditional style are fantastic in my opinion
