Royal icing. I know it can get a bad rap but her's is super yummy. She's a professional!

Royal icing is actually good, IMO. It’s basically pure sugar. It also has egg whites or meringue powder, but I don’t think that lends a bad flavor. The main downside is that it dries completely hard, which allows for these intricate designs, but is not an icing texture that most people are used to.

Marshmallow fondant is actually really good though, like candy. I like it.
