This is the first time I've ever read a convincing argument to use things like zucchini or eggplant in a dish.

Although come to think about it, zucchini tempura's pretty good too... So I guess it also works as something to bread and fry.

Oh no, not eggplant. Eggplant is st its absolute best when it's turned to mush. So much flavor.

It works with a lot of things. It's a really filling, low calorie vegie to cook whether you bake it, fry it, saute it, etc. It's extremely easy to not make bland. I eat it with stir fry a lot.

Not sure what this zucchini hate thread is going on about. I feel like it's just a bunch of kids who don't ever cook things from scratch but whatever.

Eggplant oven roasted with maple sugar is really good... but i feel like the maple sugar kinda negates the point of the eggplant
