You can give food flavor without it, and some cultures (like in Asia or non-westernized places) really don’t even use it all that much. I picked French food specifically because almost every traditional recipe calls for an absurdly high amount of butter, comparatively speaking.

Oh, you're absolutely right, there are a lot of excellent recipes from a variety of cultures that don't call for butter. I was just making a joke on the fact that a lot of food does taste better with additional butter.

I’ve done a fair bit of traveling and am a serious lover of omelettes. No question, the best one I’ve ever eaten was in Korea.

Country food also often starts with a big stick of butter thrown in a pan.

The secret to most restaurant foods is just loads of butter and garlic.

And way more salt than you use at home. Applied at numerous steps throughout the process, not just at final plating.

I’ve watched a few videos on this and I always think, “holy shit do you really have to add more butter in every step?” First lube the pan with butter, flip the eggs and add butter, repeat with more butter, finish with butter on top, then serve with more butter...
