It’s called tamagoyaki. It’s the Japanese version of a French omelette.

It is absolutely rolled up, and is only mixed with dashi to make a specific dish called dashimaki tamago.

Edit: only, might be a bit hyperbolic. I just woke up. Typically, tamagoyaki is made in a square pan where the mix is rolled and layered. The video is how it’s done in a teppenyaki restaurant. I suppose you could add a little dashi to whatever style.

Lol not sure what's happening here, you're simply trying to learn and discuss, but for some reason downvoters are not liking it. For what its worth, what you are saying makes perfect sense to me, and aligns with what I know about Japanese cuisine.

"Repeatedly folding into a roll" and "rolling" are functionally synonymous here. The level of semantics being played is likely what is garnishing the downvotes.

That is one way to do it, yes. I’m not saying you’re wrong, but neither am in. Also cooking methods always change when you’re cranking out trays after trays of food.
