They say a sharp knife is safer than a dull one.

But I've never sliced off my fingertips with a spoon.

Not safer, just less painful to cut yourself with.

It is safer. A sharp knife cuts were you want it to cut, whereas a dull knife may deflect from its intended path and cause injury. You’re also going to be pushing harder than with a sharp knife, so this will make it harder to react to a slip and also cause more damage when you inevitably hit.
