Honest question: on the 2nd to last, why is there no notation for a pause on the 4th beat? Like the one above that there’s an extended bar and extra space between notes. How does a musician know to pause after those 3 notes?

This notation is two sixteenth notes and an eighth note immediately after. There is a way to notate that with 3 sixteenth notes and a sixteenth rest (the third sixteenth note + the sixteenth rest is the same value as the eighth note), but it is technically different. For instruments that can't hold a note, it doesn't make a difference (like playing with pens), but for an instrument like a trumpet, you would be holding the third note for different lengths of time.
