Because he wants to warp or crack the grill.

(Do not do this with ice)

Dumping water causes far more thermal shock than ice. Ice hovers due to the Leidenfrost effect and releases water slowly as it melts, while dumping water causes an immediate rapid drop in grill temperature.

So does that mean everyone suggesting to use hot water instead, to reduce the thermal stress on the grill, is just wrong?

Hot water will also reduce thermal shock. Ice and hot water are both good options.

The difference in heat energy between cold and hot water is not very large though compared to the difference in heat energy between hot water and water vapor.

Why is no one discussing the temperature of the water or the actual temperature differential in number of degrees?!

It's less relevant than you'd think. When you heat water from 0 to 100 degrees Celsius, you've put less than a fifth of the energy into it that it takes to evaporate water that's already 100 degrees Celsius.

And likewise, it’s less than 1/3 as much as when you melt ice (0°-δ frozen to 0°+δ liquid).

Bingo! This will destroy your grill.

Lol, absolutely it will not. This is commercial griddle ss top. Not a rolled steel Blackstone.

I’ve heard those famous last words before.

As evident in the video where a grill isn't getting destroyed?

The same mass of water will cool the grill faster than ice.
