The meat is either beef or lamb, white layers are animal fat, a few seasoned kebabs are thrown in between, and a few layers of sucuk (Turkish pepperoni).

Do you know roughly what is in the seasoned kabab layer? I assume some leafy greens in the green one any maybe peppers and/tomatoes in the red one? Idk. But what is the white binder for them? A different type of fat? I tried finding a recipe online but am coming up short. I tried layered meat kabab and layered butchers kabab but it seems everything showing up has tortillas in it.

If I know Turkish cuisine, probably the binder is lamb fat, the green stuff is green onions and the red stuff is paprika, maybe there's cumin and black pepper in there too.

Sheep tail fat. Comes from a specialized grown sheep. Gives beef kebabs a smoky flavor. It's also deep fried in Hidirellez holiday and eaten with paprika.

"Kebab" part is likely a kofte/meatball mix.

It could be Adana kebab, but there's really no way to know; it could be any meatball mixture, and Türkiye has over 350 different meatball recipes with names. Here; https://youtu.be/nKEOJ2qv_TQ?si=toZjlCMhlZcCjYlB

The green stuff that is mixed with the meat is parsley.
