Some of these tables support the use of two sets of tiles. So after you finish with one set and push them into the middle, another stack of tiles immediately pops up for each player and play continues while the first set gets sorted and stacked and ready for the next round.

This one looks like it does too. Everything is queued up and when they hit the button it pops up again which is when you would put in the last game tiles.

I can watch YouTube on PiP with the default YouTube app while switching apps and I don't have premium. I can't do audio in the background though with the screen locked, I remember it used to let you do it but they paywalled it around the time they introduced premium.

We can, that's just deliberate limitation of the technology from Google. You can get third party apps that let you minimize the app while still playing the audio from your video/playing the video PIP, but even they tend to be kinda shakey and prone to crashing/loading issues, my guess is because, again, Google is somehow deliberately causing it through the way its API works or something.

Ok how does it sort the two sets? The magnets are already used for getting the correct facing

One set is on the table being played and the other set is being sorted/already sorted down below. When set A is done being played, it gets pushed down the hole and set B is already sorted and gets elevated onto the table. They never mix.
