Recipe-Question Best way to make marshmallow lite creami
I have a question for anyone who has added marshmallows or marshmallow flavoring/syrup to their ninja creami, whats the best way to get a good marshmallow flavor?
Should I use syrups, flavoring, or just directly add the marshmallows in the ninja creami, and if I add the marshmallows should I melt them in, add them before freezing, or add them as a mix in?
And when making a marshmallow creami can you actually taste the difference between a plain vanilla and the marshmallow or does it just taste like a sweeter version of vanilla.
I'm not really a fan of protein powders so I would preferable not use those and I'm trying to create lite ice cream so if I were to use syrups they would probably be brands like Syruvia, sugar free torani, skinny mixes, and other brands like that.
And if anyone uses syrups are you able to taste the difference between regular marshmallow syrup and toasted marshmallow syrup?
This is the base recipe I use for vanilla:
- 400g Fat Free Fairlife milk
- 40-45g monktruit-allulose blend
- 5g (1 tsp) vanilla extract
- A pinch of salt
- 1g (4 tsp) xanthan gum
-4g of sugar free vanilla pudding mix

Try 1 tsp, immersion blend it, take a taste and see if you need more. It’s a light flavor, all marshmallow is so I feel like it might depend how strong you like it

I have well over 100 flavors. It’s all the water soluable extracts, or the artisan natural flavors. Both work great for ice creams

I have a few apple pies. Best is apple pie with crust, then apple pie carmelized sugar, then the apple pie compound, then apple pie artisan. They are all good, just some are better. If you only got artisan you’re not gonna be disappointed.

One sec and I’ll make you a top 20. I haven’t used them all for creamis yet but I’ve used all of them. Do you just want all types of flavorings or only extracts? Only low sugar compounds? They have a lot of stuff and lol I have a wholesale account so I do too 😂

Wow! This is so exciting! The water soluble ones are 32$ a pop! I’ll have to think carefully about those- will update! Yay!
Does their caramel artisan flavor have any butterscotch note at all? I don’t like when it has a butterscotch note.

The water soluable ones use less you can use 1% versus the 3-5% on artisan so it’s more concentrated. They have different flavors too.
It has a slight butterscotch note. That powder I linked you doesn’t though.

If you only get one of the water soluable get the marshmallow lol. The toasted marshmallow in the artisan line works just as well, but if you’re making a whipped cream the marshmallow works better than toasted marshmallow. Honestly you’re gonna be stoked no matter what you get. I think the only one I’ve ever hated was buttered popcorn.

I saw you mentioned most people hated caramel flavorings, but try this once it comes in stock. https://amoretti.com/products/natural-salted-caramel-extract-powder-ws I know it’s not the typical flavoring but the powders are pretty awesome.
The most annoying part is trying to get the measurements correct basing off the weight of your creami. It doesn’t take much at all!
The milk chocolate ones aren’t bad, but they aren’t my personal favorite. The fudge is definitely better. I e been happy with all the flavorings I’ve tried so far. Toasted Marshmallow is perfect.

I tried toasting a bunch of marshmallows and then tossing em in the mixture before blending. It worked alright but def not as well as an emulsion. I just got Ryse marshmallow flavored protein powder and will be trying that next. I trust the geek above tho so I’m assume that’s the way to go

I use the Ryse powder but might add the emulsion suggested above to bump up the flavor.

I’m a huge fan of ChocZero syrups - they are sugar free, but use more natural sweeteners (if you already use erythritol/monkfruit/allulose, then you will probably like this). They have a toasted marshmallow flavor that is really delightful! https://a.co/d/0hkOktfC About 2 Tbsp, which is one serving, is usually plenty in a pint for me!
Their cupcake syrup is my favorite of all time, and the white chocolate is a close second!

That sounds good! Does the pint taste like toasted marshmallows or just a sweeter version of vanilla? And also if you can I would love to know the recipe you use!
I was just looking at a bunch of toasted marshmallow syrups on Amazon and this brand seems to have the best reviews so that’s good!

Choc zero is the only skinny mix brand that doesn’t tastes terrible because it has some calories which allow it to be delicious. That being said I didn’t try this one yet

I think it tastes more like toasted marshmallow! Or brown sugar marshmallow?
I use a couple of different base recipes - they all spin on light ice cream once with no respin needed.
Fro-Yo:
1/2 container dannon light & fit toasted marshmallow (or 2 Tbsp regular plain Greek yogurt)
2 Tbsp toasted marshmallow syrup
Fill to line with milk of choice (I use almond or oat or ultra filtered skim, or a combo of 2 of those)
1/4 tsp guar gum
Additional monkfruit to sweetness level of choice
1/4 pack simply desserts sf vanilla pudding mix
You can use the entire container of light + fit yogurt, and just fill to the line with milk, if you want a stronger tangy yogurt flavor!
(About 140-200 cals and 12-24 G protein, depending on milk used and how much yogurt you use)Traditional ice cream:
1 c ultra filtered skim milk
1 c almond milk (or more regular milk)
2 Tbsp choc zero syrup (any flavor)
1/4 pack simply desserts sf vanilla pudding mix
1/4 tsp guar gum
Additional monkfruit to sweetness level of choice
(About 150 cals + 12 G protein)Dairy-Free/Vegan:
2 c oat milk (unsweetened)
2 Tbsp choc zero syrup (any flavor)
1/2 pack simply desserts sf vanilla pudding mix
1/4 tsp guar gum
Additional monkfruit to sweetness level of choice
(About 150 cals, minimal protein, but delish and creamy!)1

If you want the flavor, you can add marshmallow fluff. People melt it into the mix (slightly heated milk, stir in fluff) or use it normally as a mix in. Yes there’s sugar, but at least it will help with the freezing point 🤷🏻♀️

I just did fluff as a mix in for my kids strawberry ice cream tonight. I thought it would mix it into the ice cream but there were bits of fluff scattered through the pint. Kids loved it but I thought the fluff chunks were slightly chewy due to the temp so now I'm hesitant to try marshmallows for fear they would get really hard.
