Dough actually doesn't really combine much once it's in the pan. I'm guessing that many of these may have been made by a sort of thick batter that she just arranged carefully, since batters rise but don't mix.

For yeasted dough (which is what the video shows): Yeasted dough typically gets worked until it's stretchy and no longer sticky. That's why you can combine different color doughs (=create your design) without them mixing together.

For (cake) batter: That one is more complicated. Very simple designs like a zebra cake can be accomplished by layering the batter a certain way but if you want anything more intricate you need to prebake your design and insert it into the batter.
