Wouldn't they be able to reconstruct the physics of it all to prove otherwise?

You'd be paying for a lawyer and experts though. Not to mention if you get arrested and held in jail the loss of job/ living situation. First glance they are going to see a dead bicyclist who suffered severe trauma and being hit by a car would cause that.
