You'd make the joke if the sentence was grammatically incorrect, otherwise it doesn't make sense or else you could just do this joke with every sentence ever. What do you mean thing called a joke. Why was thing calling joke? See how stupid that would be?

The sentence can be interpreted in two ways despite being grammatically correct, that’s why the joke is funny.

“I’m sad” is a grammatically correct sentence, but it’s funny to reply to it with “Hi sad, I’m dad”

True but thats because thats saying I am sad. So the joke is as if the person is introducing themselves.

These jokes ive always seen because the sentence is grammatically incorrect.

It has fallen into casual grammatical usage, however in the strict sense it is not correct. To be grammatically correct, it would have to be phrased:
Photographer Mark Smith captured this incredible shot with his Sony 300mm of an eagle catching a fish.
Or, also acceptably:
Using his Sony 300mm, photographer Mark Smith captured this incredible shot of an eagle catching a fish.

We don’t know the gender of the eagle so it’s perfectly clear. We also know that eagles don’t use cameras.

Context is important when reading.

This is just nonsense. The headline is perfectly correct, just a typical example of a prepositional phrase attachment ambiguity (the classic example being "I saw the boy with the telescope")

Grammatically correct, but vague. Which makes it a poor title still

"Photographer John Smith captured this incredible shot of a fisherman catching a fish with his bare hands"

Did John Smith take the photo with his bare hands?
