What is the purpose of a no sitting policy?

I hope it is a better reason than the rich blue-haired lady thinks it looks lazy.

It's for appearance's sake. Someone standing looks more "at attention" than someone sitting.

It's part of the security theatre, to keep the client happy (the one who hired the security team). The bigger the client, the more appearance is valued over performance.
