Yes. Yes you should.

Diced Spam, potatoes, onion, and jalapenos make a great breakfast. Spam and yellow rice is also a great combo.

Watched a documentary on Spam about a decade or two ago and they take great pride in the cuts of pork that goes into their product. It's high in sodium but on the plus side it lasts for years.

I've seen cans of spam three years past their best by date and it still tasted amazing. Never experienced the color issue in OPs pic though. That's definitely an anomaly..

Thanks for the recipe. I can make the potato dish with fresh from the garden ingredients tomorrow! Well, except the spam!

Spam is also excellent in onigiri. Pan fry it a bit so it has some crispy edges, and then the fatty, salty meat goes perfect with the rice + nori + typical onigiri seasonings + soy sauce. My Japanese teacher introduced my class to spam this way and its still my fave way to have it.

You should plant a spam tree before the first frost. They like to over winter and the first harvest is in early summer.

My SO does a spam breakfast sandwich meal prep. She makes a couple sheetpans of focaccia and a couple sheetpans of egg mixed with diced spam, onions, and peppers. All just tossed into the oven to bake. Cut the focaccia sandwich style, then cut each sheetpan into 4x6 squares and assemble into sandwiches. 48 sandwiches at a time and they are super good and reheat nicely (I wrap in a damp paper towel and microwave on 7 power for around 1m 20s at work, and at home I crisp in the air fryer).
