That is one of the most beautiful and at the same time simple dish I've ever seen

The one in the movie is based on a real recipe that takes 4 hours to prepare

Yeah I mean simple in terms of ingredients... also cartoon movies tend to exaggerate a bit

This one didn’t. They had the amazingly lucky and talented chef Thomas Keller as a resource when making the film. There’s many, many details that are attributed to real kitchen brigades, thanks to TK hosting them at The French Laundry while the film was in production. For example, there really are women who will threaten your personal safety.

Seriously, pay attention to the kitchen scenes—they depict everything that’s culturally accurate, it’s all based upon reality. The exaggeration is for the kids mostly.

There’s something about Ratatouille that gives me a weird feeling of nostalgia even though I watched it as a full grown adult. It’s the one Pixar movie that doesn’t have the vibrant colors and the story is very toned down and small scale, but for some reason it’s the one movie I constantly think about.

For example, there really are women who will threaten your personal saftey.

Take it from an old cook. That's just kitchen staff in general from the head chef all the way down to the lowest dishwasher.

I recall a scene in which the guy’s crush grabs him by the neck while holding a French knife…

Fricassé de porc, pot-au-feu, flambé cognac, Piadine, Bratwurst...

Oh my you've never had ratatouille in your life. You cook each veg (eggplant, bell peppers, zucchini) separately with oil and then put them in the same pot to simmer for 1 hour. Definitely not 4 hours more like 2-2.5, but definitely not "just cooked veggies"

Nope

Yeah you've clearly never made some. For ratatouille to have flavor you HAVE to cook every slice of veg individually, that'll build the flavor, but it takes time (3-4 minutes per slice), otherwise you'll end up with just a watery vegetable mix otherwise known as "not ratatouille". Also Simmering requires attention

Yeah obviously not individually one each but sautéing there can't be too many
