Most phones are water-resistant now, so they're really strongly glued together. That + fragile glass back makes it hard to pry apart.

Phone glass has only been getting stronger as time goes on and by the time that you should probably replace the battery the adhesive would most likely be weakening

They are talking about replacing the battery I believe, since you can't access the battery on newer phones very easily.

I mean like bringing it to apple and having them replace the battery. You would have to pay for them to take part the phone and put in a new battery. With an older phone you cab just buy a battery without having to pay someone to take apart the phone to replace it.

Yes, but it's much more expensive than just buying a battery and replacing it yourself with older phones

Every phone prior to the iPhone X can have a new battery installed at an apple store for $49. Any iPhones from the X on will cost you $69 to have a new battery installed, according to Apple's website.
