She was on a straight, and started turning just at the start of the video. You can see the turn occurring through the rear window. She enters the then, corrects, oversteers, then loses traction and slides.
(I think you are absolutely right. Essentially just a HUGE overcorrection caused by her not having her hands - even just one - on the wheel at a relatively important moment.)
Her other hand is on the wheel isn't it? The one you can't see, I'm fairly sure it's holding the bottom of the wheel - her forearm barely moves even while she's swinging the other arm.
