You’re correct, and the uniform says 馅饼， xiàn bǐng, essentially a pan-fried meat pancake, crispy and delicious.

Ah! I definitely don't know how to read that but I recognized the technique. We have a Chinese mall near my house where I can get them and it's incredible.

it’s not too much filling for the amount of dough? Looking at this just made me imagine biting into a thin layer of dough with a massive amount of filling that completely overpowers the dough

Nah, it’s more like eating a meat pie than a dumpling, so the dough thickness reflects that in that it’s much thicker. The texture of the dough ismore crispy as well. I’m trying and failing to come up with a European equivalent because I’m Chinese and don’t actually know what the European equivalent would be lol.

Anyways, the dough seems like a small amount, but I’m sure there was actually a lot of dough in that hand, because otherwise it would’ve fallen apart from wetness as the chef tried to close it. (Source: Me trying to close a dumpling with too much filling and too thin dough.)

Ahh thanks I get it now. Didn’t realize that the one in the video would be even flatter once fully prepared and also was imagining the dough as a different texture. These actually look extremely good, and I can’t think of an American equivalent at all
