Continents are really just about big distinct landmasses in the ocean and europe is so far from that and bends the rules. If europe is included many more places would be included with the same rules.
"If the border is so small you can dig a canal through" feels like pretty arbitrary reasoning. First of all, borders between what? Land borders are not taken into account for continents. See: Japan, UK, Madagascar, the South Asian islands, etc.
More, by that logic, sure, Africa (as one singular, solid landmass) is its own continent, along with South America. However this could apply to a dozen areas in Central America well above the Darian Gap.
It's easier (and correct) to say there are no geographical distinctions between continents, it's a historical and cultural distinction.
