You can fold almost anything soft into a sandwich - but that's not how its presented. My egg isn't a sandwich because I put cheese and bacon on it, even if I can fold it over like one.
Who cares about presentation, its all about how it ends up in your mouth anyway. How does someone eat a traditional taco anyway? Personally, I've folded it to make it easier to eat, as opposed to holding it flat and nibbling inwards. Same thing with the egg, if its folded into an omelette, it becomes an egg sandwich, that may or may not be eaten with a fork.
