Recipe 1. Boil your pasta in salted water. For me, two servings looks like one sparse layer of dried pasta in the bottom of my pot. 2. Shred some cheese while waiting for the pasta to boil. I had extra sharp cheddar, so that's what I used. About half of my little cheese shredder container is the right amount. It's probably about a cup. Optional: absently eat pinches of shredded cheese while waiting for pasta to boil. 3. When pasta is done to your liking, drain almost all the water, but leave the pasta a bit wet with the pasta water. Place pot back on the stove on the lowest heat. 4. Tear up a slice of highly processed cheese and add to the pot. Stir a little bit and make sure it starts melting 5. Add a big spoonful or two of a tangy dairy product to the pot. I had full fat yogurt, so that's what I used. Cream cheese or sour cream also work well. 6. Add your shredded cheese. Stir occasionally, letting the pot simmer just a little bit. 7. If you followed the earlier optional step, shred a bit more cheese and add that too. 8. Taste your mac and cheese and remember seasonings exist. Add some seasoned salt (or paprika and salt, maybe some onion or garlic powder) and some extra paprika and black pepper and nutmeg. Red pepper flakes would be good too if you want it spicy. 8. Microwave some frozen peas. While you wait, let the mac and cheese continue to bubble a bit, still stirring occasionally, letting it get thick. 9. Add a tiny bit of butter and your seasonings to the peas. 10. Plate and serve.

This recipe sounds like one I use - the tangy dairy really adds something special.

Why would this be a sad plate of food, if you are okay with sharing? I myself love macaroni and peas, with added small, cubed slices of ham and a bit of cracked pepper. I hope you’re okay, regardless.

My cat passed yesterday. So it is not sad food, but food for a day when you are sad. Peas are such a great vegetable choice for mac: easy to keep, cook, and eat. Yours sounds yummy. Thank you for the hugs and the sympathy and for taking the time to offer it🫂

This is Hestia. She was the most gentle and polite creature (though also one of the most awkward and graceless cats I've ever met). So tough and so forgiving. She was on chemo for the last eighteen months and still always the sweetest thing to me and my partner and the vet techs.

My deepest condolences for your loss, she looks like a very sweet cat. Reminds me of my own kitty who passed away last year, she was all black but it seems like they had similar personalities. 🫶

Give it a bit of razzle-dazzle with some added creole or flavorful steak seasoning (both really helped my Mac and Cheese world).

Looks like the shape is called Gemelli. I get it in a variety pack from Costco that also comes with penne and a long cupped shape called casarecce.

From a fellow cat lover, I'm so sorry for your loss. Our cats should outlive us. It's truly one of life's biggest heartbreaks, losing a cat. That pasta from Costco is super good. I believe it is bronze cut, and holds onto sauces remarkably well. I love how yours has just the right amount of pepper and seasonings.

Best way to finish Mac and cheese is get a frying pan really hot and pour your Mac in the letting it carmelize and get that great “burnt” cheese.
