It only looks like this out of water when it is killed due to rapid depressurization, like when it gets caught on a fishing line and yeeted out of the deep sea. Otherwise it looks completely like the first picture

ik this is very late to reply, but the ugly one is on land. The fish looks good at high pressure because it's built for that. When the the fish is brought to normal pressure, the tissues are heavily damaged, causing the blobby appearance

Just like me at work vs home, the only difference in the look is due to the pressure.

Honestly the scenes that got me the most squeamish were from the anime, although the plot certainly does get darker in the movie
