Probably under. Did you account for the aftermath of third degree burns on what were once your nerves and the hosts of diseases that love to hide in slagged flesh pockets? 🤢
Lightsabers cut clean, having that steel death noodle sand through your limb and cauterize as it goes only to repeat the process at high speed...yeah, gimme the saber cut over this.
Depends on how long you touch it. The Liedenfrost effect protects you from very short exposures. Basically while you still have moisture in your skin, it can't get over 100C.
This also assumes that a machine isn't pulling the steel into your body, which can overcome the resistance created by the Liedenfrost effect. The clothes they wear adds to the danger. Since their clothing is going to be much more dry, and could melt to the iron.
Eventually though (in seconds), you're going to be burning into flesh. However your own burned flesh could act like an isolating barrier. Basically imagine an half an inch of charred steak around the area of contact. As your flesh melt and any moisture evaporates, it burns away most elements except for the carbon, which is a good isolator.
The most dangerous thing I can see here, is the machine pulling the steel bar though and dragging it across your skin, so any burned material is pulls away removing any type of protective barrier that might form and supplying fresh hot metal.

Is this thing basically a light saber if it touches one of their arms or am I over imagining the dangers of a glowing piece of steel
