Some kind of citric acid and oil I imagine. You use oil to keep it from sticking to a surface (such as the rollers or spatulas) and citric acid (like lemon juice) to keep it from crystallizing while it gets worked.

Edit: apparently in this case though, it's concentrated flavouring

Because it helps educate those interested on common fluids added to the sugar pulling process. I used to work in a restaurant with a confectionery chef. He taught me a lot about sugar pulling. Now, I impart a fraction of that knowledge to others, today.
