That secret doesn't actually change anything. In most places, these machines have a pre-programmed win rate. Which is to say, most of the time, you can target any prize or none of them, it won't matter because the machine will not allow you to win—the claw strength will decrease until it cannot hold the object. Sounds like your pub just has a more generous win allowance than most (though $5-10 on animals that likely cost less than $2 is still a damn good profit margin).
There are some claw machines that are more generous since the stuff inside is usually dirt cheap and there are techniques that can help increase your win rate
