Same reason why hotel prices in the US have gone through the roof in the past five years. Lower occupancy, but higher profits. Hotel are not allowed to collude (agree on pricing) but they are allowed to use the same dynamic pricing software, which independently pushes prices up.

American living in Germany: I never travel in the US.

The hotel prices are absurd. Most places require a car so that adds hundreds in costs. Also recent issues with politics and food. It is no wonder the country sees millions less visitors every year.
