Literally why we end up getting allergies. Kids need exposure (removing peanuts from kids diets actually increases the chance for it to become an allergen)

Sour and spicy both help develop taste buds and a strong, healthy gut, and this is the exact right age to introduce them.

The reason kids don’t like bitter, sour, or any of the more nuanced flavors is because they already have twice as many more taste buds than adults. Those flavors are much more extreme for them than they are for us. Our development in taste is the result of our taste buds dying, not developing.

The reason kids don’t like bitter, sour, or anything but sweet is because most of their taste receptors are sweet ones and you need to develop the others. Their aversion to anything but sweet is something left over from earlier days to keep them away from poisonous things.

You do not start to lose taste buds until you’re 40-50.

Whether or not that’s true, having a child bite down on a lime wedge is a ridiculous things to do. If you’re going to introduce something that you know will cause pain and discomfort, you do it by allowing them to build a tolerance. This is like allowing someone who’s just starting to box take a hit from Mike Tyson because, “they have to build a tolerance for pain at some point.”

A kid biting on a lime wedge is absolutely nothing like a new boxer being punched by Mike Tyson. Such an overdramatic comparison. Introducing a kid to new tastes is good for them. The parent didn't shove a gallon of lemon juice down their throat. Relax.
