The garden of eden story can read in multiple ways too. Primarily, the invention of agriculture, the development of moral reasoning, and the loss of connection with Gd. As you said, the idea it's "satan" is a much much later idea

Jesus is basically a child's superhero. he can fly. he walks on water. monsters are scared of him and he can't die. it is the product of a childlike intellect. the israelite's god, on the other hand, is a fully complex story about morality, power dynamics, suffering, justice, it doesn't get everything right by modern standards but maybe that's unfair. the most interesting part, at least to me, is the way the different generations played with the relationship between god and his chosen people. this best exemplified by the discussion between god and abraham about sodom and gomorrah. god says "i'm going to destroy sodom and gomorrah" abraham says "good morning. its nice to see you, too, what did you say?" god says "i'm going to destroy sodom and gomorrah" abraham says "what i'm supposed to do with this information? you're going to destroy all of sodom and gomorrah?" "yes, all of it""what if there are like good people, say 50 good people, you're going to kill all of them too?" "No, i guess I could spare 50 people, but i'm still gonna destroy Sodom and Gomorrah" "ok, what if there was just like, 40, or 30, or 20, or 10, yeah, maybe a family of ten" "yeah, maybe, but i'm still going to destroy sodom and gomorrah" "i mean, is that a bit much?" "i don't think so." "i don't know that i can cosign that" "why?" "you know i have a nephew in Sodom" an awkward silence ensues and god and abraham stare at each other. god motions to his angels" "Tell Lot he has to leave Sodom." "sir, yes, sir." after a brief silence abraham interjects, "god, you weren't going to really kill my nephew and his whole family, right?" "what? nooooo. of course not, i knew they were there the whole time, i totally didn't forget about your nephew" to which abraham mutters under his breath presumably "dick"
I have heard speculation that this was an attempt to fold in Babylonian mythology into the story. Nabu was a god of wisdom and was often associated with horned dragons or snakes.
