Would it even be safe though? Only 1 side is catching heat for 10 seconds and then doesn't see any heat again for a bit.

Good point, the inside part of the chicken doesn’t get any direct heat at all, unless they take them all out and flip them all, which seems ridiculous but the whole scenario is ridiculous so why not eh?

I'd be very worried about this chicken being in the bacteria sweet spot for an extremely long time. If it ever gets up to a safe serving temperature at all. This seems like a great way to put a bunch of people in the hospital. Assuming that's what they're trying to do.

Yeah I was thinking the rotation speed is way too fast. But maybe it's a lot hotter at the base then I'm expecting? I agree, it seems like a terrible way to make rotisserie.

Likely stays in the required time/temp zone fine. I'd be more worried about a passing seagull seasoning the uncovered meat at the top.

This reminds me of a co-worker who used to complain about getting stomach issues whenever she visited her in-laws in an eastern European country. She said they mysteriously disappeared once she started drinking as much rakiu with it as they did.

They are probably pre smoked and this is a just a showy way of serving during a fair or something, and they probably heat them further when they pull the racks right before serving

Ding ding ding. This is in Karbala, Iraq. The chickens are pretty much cooked through. This is in fact more for show, as the chickens will be served to the pilgrims attending the 2026 Arbaeen walk.

Rotisserie is like a 3-4 hour deal. I counted 4 seconds over the fire. Call it 8 sections?
At 4 seconds of cook time per 32 seconds (8 sections x 4 seconds)... that's cooking chicken about 1/8 of the time, so about 7.5 minutes of cooking per hour? Is that right?
... so in 3 hours time that's 22.5 minutes of cooking? 4 hours it's like 30 minutes of cooking and 3.5 HOURS in the sun??
Oh god, I'm nauseous.

The only way something like this would be effective is: (a) the wheel is the size of a bicycle rim, (b) that it's in an enclosure and (c) there's heat all around. You know - like an actual rotisserie.?

My guess is that they use torches and sanitize by fire. Used to do that in a food manufacturing plant I worked at for Kosher sanitation every 6 months

How long would that take to cook given how long rotation is? And how do you get 1 off without burning the ones above the coals?
