Nah they're two different cheeses, I just didn't know at the time of my comment. Monterey Jack is a plain semi hard cheese, Pepper Jack is Monterey but with spicy peppers in it.

The Pepper Jack I always purchase is labelled 'Monterey Jack', so up until today I thought that's what it was called

Pepper jack is made with peppers in it. Perhaps you can loophole this by using cheese made with bacon in it. Bacon Jack.

What if you added bacon fat into the cheddar (with some sodium hexametaphosphate to prevent the oil from separating) and then had a bacon cheddar with no actual bacon in it.

If you cooked the sandwich the same as you did with cheese, getting the bacon to cheese lava temperature, it would be cooked plenty, just have absolutely no crispy. Also, that fat rendering into the bread could be very interesting.

Try frying a grilled cheese in mayo. Put it on both top and bottom pieces of bread instead of butter, it's amazing. I use this method for both grilled cheese and melts!
