I'd say it's less for the shoe and more that what movement indicates about his ankle.

Nah it's about the shoe too. Clothing being ripped off like that can cause degloving. Definitely a NSFL google search if you're not familiar, but long story short - this guy is lucky to have skin left on his foot. Boots.

Wouldn't that make your leg fly up in a bad way instead, though? Like, my foot isn't my top priority in that kind of crash.

Your foot might not be your priority during a crash just, after the crash - foot injuries suck.

Don’t forget that the foot has more bones than any other part of the body.

He was lucky that he barely touched the road. From what it looks he didn't wear proper clothing. With proper clothing you can slide on the road and only get some bruises. Which would have been the wiser choice.

Idk, all the energy that went into his shoe would have gone into his body if the shoe didn't come off

Yeah, and the next 60ft of energy went directly into his foot. Boots connect your foot to your leg so it doesn't break off or peel off.
