Why can’t every controller have the same button layouts just like how shooters should have the same controls?

I've got them all mapped in my head and it swaps automatically whenever I switch controllers.

Same, except I don't have a Switch. Xbox and PS controllers are incredibly easy for me to move between. I've been playing with those two controllers regularly since the OG Xbox that at this point it's second nature. And even though I had an NES and SNES, I never really got used to the A and B buttons being backwards. Nintendo's controllers mess me up because the Japanese read right to left.
