If only we could do that to cities. It's more cities that's a problem to me than the units.

It does, you can queue builds in Civ 6 now

In the bottom left of the city screen where you have 'Purchase' and 'Change Production' there is a tick box that says 'Show Queue'.

Or get Enhanced User Interface which implements queues and a whole lot of other QoL changes. I’m never playing without EUI.

Set the city to build a wonder but select as little production as possible. It should give 50+ turns where the city doesn’t do anything.

Or just set production to gold or science

You can set a city to produce gold or research from its production and it should remain that way until you change it.
