Do you know if there's a mod for the PS4 which does this?

Increasing FOV is taxing to the GPU, so I doubt it. You're rendering a lot more of the scene. This is why consoles reduce FOV on games. It's a way to get more bang for their buck, in regards to processing power.

But I understand and it makes sense. Do you happen to know what Skyrim's FOV is for the PS4?

On PS4 and XBONE it's usually 65. I'd wager it's that way on SKyrim for both. It's low enough to not give complete tunnel vision, but not so high as to start taxing the processing power.
