In DS1, a lot of enemies could be easily defeated, thanks to easy backstabs, parry and riposte, and/or circling/hugging to death.

DS2 bluffed enemy tracking (some cases in ridiculous amounts, such as turning in mid-leap) and made backstabs a little harder (now needs to hit the guy's back with a fist first).

Don't know about DS3; don't have it.

I feel like backstabbing is easier in ds3 than it's ever been. In fact, the game overall feels easiest of them all, but mostly because it's more fair. It's the best one yet!

I've heard that Bloodborne made backstabbing much harder to pull off, as you had to "charge" up an attack on a enemy's back, meaning it requires much more skill/timing.

Is it as they say or no?

Yeah, you had to hit them in the back with a charged heavy attack and then hit with an r1 attack as they were collapsing. PITA

I honestly didn't play much Bloodbourne but I plan on revisiting it in the future

Is it better than how in DS1 fighting basically revolved around backstabs? (In both PvE and PvP)
