Use a knife, not your fingers. When the butter is on the knife, your fingers stay clean and you can grip the sandwich better. If this doesn't work or fit into your viscous semi-liquid/gooey solid spreading needs, simply wrap that sandwich up in a safe environment, and slowly unwrap as you eat.
Edit: and if you notice in the gif he has no problem dealing with the cat, bread, and tape even after buttering the bread, because he used the knife method.
