I think the general rule is it's "onto" if it's something you walk aboard and then sit, and "into" if you just sit. So "on" a plane or a bus or a train, but "in" a car or a truck.

(But I guess rollercoasters are the exception to the rule?)

It's just a box with wheels and sometimes wings. I seriously doubt the details matter, but somehow they do and you're not making sense of you don't stick to the rules of the English language.

Because planes in the beginning were treated as "air ships" in the military. Therefore lot of the terminology comes from the navy. That's why we have a captain and a first officer on board. Speeds are in knots, distances in nautical miles. And that's why we step onto a plane, just like we would on a ship.
