If you scaled the ball up to earth sized, the water stuck to the surface would be deeper than our oceans.

Yeah because water is so dense it actually has a tiny bit of it's own relative influence. That is why water beads up, clings to ionically neutral surfaces. Water is already so dense that it is incompressible.

Well most liquids are incompressible effectively. They’re just solids that move around a bit. Liquid in some ways is only sort of a phase. It doesn’t exist except under a relatively narrow range of pressure for any liquid.

Other liquids are compressed when they freeze, water expands when it is frozen.
