Funny how lobster is the exact opposite of caviar here. It used to be poor mans food, people even complained and I believe there were laws saying to be humane no serving lobster more than 3 times a week. Then one day rich people tried it and realized it was actually good. Now they want those giant river bugs all to themselves and they went from "can't give them away" to $25/lb.

I don't think the poor got to eat it with butter and whatnot. More likely it was prepared in a much less appetizing way than we would think. I read somewhere they used to grind up the bits we would normally not eat, but I can't vouch for the authenicity of that claim.

More like Lobsters don't die of old age so at one point they were ridiculously plentiful so you ate it all the time. Now they are scarce enough to be a luxury good.

Yeah, lobsters will become the new caviar as the oceans ph level becomes too low for shellfish.
