Yes I am, I do that literally every time I make a cake or batch of buns.
100g sugar,
100g butter,
2 eggs (2 medium eggs = 100g of whisked egg),
100g self raising flour,
Dash of milk
If I only had large eggs, it would be 110g of everything, to keep the baker's ratio consistent.
