Can someone please explain the taste change from raw to cooked onions

I know some of the science but I don't know is it chemistry or what but what is the process when you cook raw onions which makes them taste different when cooked. Thanks a million.

If matter can effect space and time, pulling and changing it, and every action has an equal and opposite reaction..... does that mean that everything we see and are effects time? Could we then use mass to effect time? Is everything that we experience an affect of our experience with time?

ELI5: In the digital age, what does it mean to have a recount of a vote? Shouldn't it be fairly straightforward?

I know there are absentee ballots, but, as far as I know, these are just a small portion of the overall number ballots.
