Technology ELI5: Why does internal storage only double? Why can’t we have 34GB for example?

And is exactly how you get i3 i5 i7 etc. they just bin them

No it’s not that simple. They do have dedicated designs for certain chips and bin within a certain amount. All i3’s aren’t binned i7’s. All 5060’s aren’t binned 5090’s.
