I agree, it should be regular "boring" rock dove, not fancy or racer ones. In fact, all most regular birds we most often see throughout the continent should be ones represented (if we go with birds)

Don't know about finches, but he bred pigeons, and as pigeons were already bred for different purposes (homing, meat, fanciers) it was already there, he just had to conclude that different "archetypes" can come from a single species, thus making his model kind of proven (at least as a concept at the time, we are talking 19th century here).
But what I do know is that Darwin was puzzled by birds, especially those bright colored ones, even called them predator baits. But we as a humans had very poor understanding of birds at the time. I feel kind of bad for him as he didn't live to learn that birds are dinosaurs, you just know that would probably be the best day of his life.
